Job Requirements

  • Three to five years of experience in commercial cooking or apprenticeship or certification from culinary school
  • Knowledge of food and hygiene regulations including HACCP
  • Understanding and demonstration of financial controls such as keeping food costs within budget, controlling stock levels, and minimizing waste
  • Good communication and organizational skills
  • Service orientation
  • Leadership skills
  • Good knowledge of Microsoft Office and Windows-based computer applications

Job Qualifications

  • Familiarity with Microsoft Office and Windows-based computer applications

Job Duties

  • Executes and supervises food production activities such as cleaning, cutting, marinating, seasoning, and cooking food items
  • Assumes responsibilities of Executive Chef during absences, including menu presentations and management
  • Supervises, coordinates, and controls kitchen helpers in food storage and preparation, ensuring tidiness and compliance with first-in, first-out principle
  • Conducts, coordinates, and supervises inventories and material consumption
  • Orders required food and equipment daily to meet production plans
  • Participates in food product and menu development for menu presentations
  • Maintains and monitors hygiene, health, and safety standards and ensures HACCP compliance
  • Conducts quality control checks and monitors compliance with recipe specifications
  • Ensures proper organization, staffing, and leadership of the kitchen area
  • Guides, motivates, and develops subordinate employees within company policies
  • Implements and controls cost budgets and initiates corrective actions when necessary
  • Supports company initiatives such as Global Quality Standard, HACCP, and Lean Manufacturing
  • Supports training of kitchen helpers
  • Executes countermeasures in production in response to customer complaints
