The role of Production Sous Chef within LSG Sky Chefs' Philadelphia facility is a key culinary leadership position responsible for overseeing the preparation of high-quality airline meals in accordance with the company's strict standards, menu specifications, and daily production schedules. This on-site role involves directing and supervising kitchen helpers to ensure efficient, hygienic, and safe food preparation processes that meet both internal and regulatory quality measures. The Production Sous Chef will also step into the Executive Chef role during their absences, managing team leadership, menu presentations to customers, and maintaining optimal production flow. This position requires a combination of hands-on culinary expertise and leadership skills to maintain operational excellence while driving continuous improvement in food safety, quality, and customer satisfaction.

Core responsibilities include managing food production activities such as cleaning, cutting, marinating, seasoning, and cooking a wide array of airline meal components, as well as conducting and overseeing inventories, coordinating food storage practices, monitoring material consumption, and ordering necessary supplies. The Production Sous Chef plays a crucial role in product development, contributing ideas for new food products and menu improvements to enhance the airline catering experience. They must maintain up-to-date knowledge of catering manuals and protocols, execute corrective actions in response to customer feedback, and support the ongoing training of kitchen staff.

Maintaining the highest standards of hygiene, health, and safety is paramount, with a strict adherence to Hazard Analysis and Critical Control Point (HACCP) regulations required throughout all operations. Quality control measures, including checks of received goods and recipe compliance, are an essential part of the role, ensuring consistent delivery of premium catering products. The Production Sous Chef also takes on leadership responsibilities, ensuring the kitchen is effectively organized and staffed, motivating and developing team members, and embodying the company’s values and management principles. Managing the cost budget within the department, initiating corrective measures when needed, and participating in company initiatives such as the Global Quality Standard (GQS), HACCP, and Lean Manufacturing are also integral components of this role.

This position offers a competitive salary range of $57,774.71 to $72,218.39 and is based at the company’s Philadelphia, USA facility. Job Requirements

Job Duties

  • Executes and supervises food production activities including cleaning, cutting, marinating, seasoning, cooking of food items
  • Assumes responsibilities of Executive Chef during absences such as vacation and off-days and leads menu presentations to customers
  • Supervises, coordinates and controls kitchen helpers in food storage ensuring tidiness and adherence to first in - first out principle
  • Conducts, coordinates and supervises inventories
  • Monitors material consumption and orders required food and equipment daily to meet production plans
  • Participates in development of food products and menus for presentations
  • Maintains and updates content in catering manuals as needed
  • Executes countermeasures in production in response to customer complaints
  • Supports training of kitchen helpers
