Job Requirements

  • Three to five years of experience in commercial cooking or apprenticeship or certification from culinary school
  • Knowledge of food and hygiene regulations including HACCP
  • Ability to understand and apply financial controls to keep food costs within budget and minimize waste
  • Good communication and organizational skills
  • Service orientation
  • Leadership skills
  • Proficiency in Microsoft Office and Windows-based computer applications

Job Duties

  • Execute and supervise food production activities such as cleaning, cutting, marinating, seasoning, and cooking of food items
  • Assume responsibilities of Executive Chef during absences including menu presentation and overall kitchen management
  • Supervise, coordinate, and control kitchen helpers in food storage, maintaining tidiness and following FIFO principles
  • Conduct, coordinate, and supervise inventories and monitor material consumption
  • Order required food and equipment daily to meet production plans
  • Participate in food product and menu development for presentations
  • Maintain and update catering manuals as necessary
  • Execute countermeasures in case of customer complaints
  • Support training and development of kitchen helpers
  • Maintain and monitor hygiene, health, and safety standards according to HACCP regulations
  • Conduct quality control checks and monitor compliance with recipe specifications
  • Ensure the area of responsibility is properly organized, staffed, and directed
  • Guide, motivate, and develop subordinate employees within HR policies
  • Implement and control the cost budget, initiating corrective actions for deviations
  • Participate in company initiatives such as Global Quality Standard, HACCP, and Lean Manufacturing
