Job Duties
- Prepare annual operating and CIP budget for the department
- establish department procedures, policies and standards
- manage department following company policies, procedures, and terms and conditions of the CBA
- responsible for the conceptual development, preparation, and pricing of menus taking into consideration availability of products, competition, potential cost, merchandising, etc.
- insure quality of sauces, soups and all items prepared or served in the restaurants and banquets
- control food costs by establishing purchasing specifications, minimum and maximum par stocks, waste control and security procedures
- maintain expenses of the department to reach profitability goals of overall operations
- hire, train, supervise, evaluate counsel, and discipline department staff
- responsible for schedules, labor cost and department operating expense
- review, approve and verify department payroll
- prepare purchase requests and assist Purchasing Department in applying appropriate controls of storeroom
- skilled and current in all aspects of the culinary arts, food trends, and preparation practices
- work with the Executive Steward to insure that the kitchens are properly cleaned
- ensure the resort kitchens abide by state and county regulations
- respond and resolve employee and guest concerns in a timely fashion
- ensure safety training, standards and regulations are being maintained
- prepare required reports
- establish a positive working relationship with resort management, homeowners and vendors/suppliers
- perform other related duties as assigned or required
