Job Duties

  • Prepare annual operating and CIP budget for the department
  • establish department procedures, policies and standards
  • manage department following company policies, procedures, and terms and conditions of the CBA
  • responsible for the conceptual development, preparation, and pricing of menus taking into consideration availability of products, competition, potential cost, merchandising, etc.
  • insure quality of sauces, soups and all items prepared or served in the restaurants and banquets
  • control food costs by establishing purchasing specifications, minimum and maximum par stocks, waste control and security procedures
  • maintain expenses of the department to reach profitability goals of overall operations
  • hire, train, supervise, evaluate counsel, and discipline department staff
  • responsible for schedules, labor cost and department operating expense
  • review, approve and verify department payroll
  • prepare purchase requests and assist Purchasing Department in applying appropriate controls of storeroom
  • skilled and current in all aspects of the culinary arts, food trends, and preparation practices
  • work with the Executive Steward to insure that the kitchens are properly cleaned
  • ensure the resort kitchens abide by state and county regulations
  • respond and resolve employee and guest concerns in a timely fashion
  • ensure safety training, standards and regulations are being maintained
  • prepare required reports
  • establish a positive working relationship with resort management, homeowners and vendors/suppliers
  • perform other related duties as assigned or required
