Job Requirements

  • 1+ year experience in food prep, commissary kitchen, or restaurant environment
  • Understanding of basic food safety and sanitation
  • Ability to lift up to 25 lbs and stand for long periods
  • ServSafe certification or willingness to obtain
  • Comfortable working early mornings and weekends as needed
  • Strong attention to detail and teamwork skills

  • 1+ year experience in food prep, commissary kitchen, or restaurant environment
  • Understanding of basic food safety and sanitation principles
  • ServSafe certification or willingness to obtain
  • Strong attention to detail and teamwork skills
  • Familiarity with rice cookers, peelers, or food prep equipment preferred
  • Knowledge of HACCP and GMP documentation practices preferred
  • Missouri Seafood HACCP certification preferred

Job Duties

  • Prepare sushi rice according to Hissho's standardized recipes and quality standards
  • Wash, peel, and cut produce such as avocado, cucumber, and carrots for daily batches
  • Defrost and portion seafood and other ingredients to specifications following HACCP and Hissho protocols
  • Maintain ingredient storage, rotation, and labeling using FIFO methods
  • Record and verify daily prep logs including rice pH, temperature, and cooling
  • Assist in setup for production shifts by stocking make tables and equipment
  • Maintain a clean and sanitary work area adhering to FDA and facility procedures
  • Support daily and weekly deep cleaning and equipment sanitation
  • Communicate with the Production Lead to ensure accurate prep quantities
