Job Requirements

  • 3 years' experience in a culinary role
  • ability to work well in stressful, high-pressure situations
  • ability to work semi-independently without direct supervision by following all standards
  • ability to understand basic English
  • ability to assist other stations in the kitchen department
  • ability to maintain a safe and sanitary work environment
  • willingness to follow all recipe cards and plating guides

Job Duties

  • maintain a safe and sanitary work environment
  • follow all recipe cards and plating guides to ensure consistency, portions, presentation, temperature, quality
  • prepare soups, entrees, sauces, cutting meat and fish, and preparing daily specials for restaurant and banquets
  • assist other stations in the kitchen department
  • direct the cleaning, preparation, and cooking of all vegetables
  • inventory and organize department reach-in, walk-in coolers, freezer, and dry storage
  • ensure proper storage of perishable products, labels, dates, FIFO
  • control food and supply waste
  • inspect incoming product and monitor final product presentation
  • follow purchasing and requisition procedures with proper quantities and food specifications
  • maintain care and cleanliness of kitchen equipment and ensure safety
  • create a daily prep list for cooks and follow up for accountability
  • maintain proper food temperatures and complete daily checklists
  • monitor kitchen staff for optimal performance and ticket times
  • provide daily training to kitchen staff
  • maintain positive attitude to support team morale
  • help maintain cost controls in food, labor, and expenses
  • assist in training new hires
