Job Requirements
- Must be able to lift, handle and carry food supplies, smallwares, equipment, supplies and paper goods weighing at least 50 pounds frequently and up to 100 pounds occasionally
- must be able to stand and move around for periods of four hours or longer
- must be able to bend, kneel, stoop, reach and squat frequently
- must be able to communicate effectively and listen attentively to supervisors, co-workers and others
- must be able to work in environments with temperature extremes (cold of 30 degrees and heat over 100 degrees), loud noises and exposure to fumes, odors, dust and smoke
Job Qualifications
- High school diploma or equivalent
- previous experience working in a restaurant kitchen or similar food preparation setting preferred
- knowledge of food safety and sanitation standards
- ability to follow recipes and prepare food according to established guidelines
- good communication and teamwork skills
- ability to work efficiently in a fast-paced environment
- physical stamina to handle the demands of the job
- attention to detail in food preparation and presentation
Job Duties
- Report to work on time and be at the side station as scheduled
- maintain uniform cleanliness and personal hygiene
- set up the side station including all food items, preparation equipment, plateware, ingredients and supplies
- follow Side Station Checklist for station set-up
- report any problems or discrepancies to the Chef
- assist other kitchen personnel in food preparation and sidework as assigned
- prep all food products according to The PM Lounge recipe cards
- prep and cook all food ensuring adherence to specifications, recipes, procedures and quality standards
- check par and stock levels of all potatoes, vegetables, hot appetizer ingredients, condiments, garnishes, equipment, plateware and smallwares before shift
- communicate discrepancies to Chef
- correctly season, cook and plate all side station food products to ensure quality, presentation and timing
- coordinate with broiler cook to ensure food is prepared and ready for service at correct times
- restock all food items, condiments, plateware, smallwares, equipment and supplies throughout the shift
- maintain high standards of sanitation, cleanliness and food safety of work area
- adhere to safety guidelines and report unsafe conditions, acts, accidents or injuries to Chef or Manager on Duty
- complete all station closing duties at end of shift
- assist Kitchen Manager and other kitchen staff with closing duties and kitchen cleanliness
