Job Requirements
- High school education preferred
- Relevant managerial and production experience required in hotel or resort kitchen settings
- 3-5 years in management of high volume food production
- Knowledge of food products, standard recipes, and health regulations
- Ability to read, write, and speak English
- Physical ability to handle kitchen equipment and lift heavy objects
- Basic computer skills
- Knowledge of food and labor cost controls
Job Qualifications
- High school education preferred
- Apprenticeship, post-secondary education, or equivalent work experience beneficial
- Managerial and production experience in hotel or resort settings
- 3-5 years managing high volume production of hot and cold food
- Experience with associate dining, upscale restaurants, and multiple outlet operations
- Basic computer knowledge
- Additional language skills helpful
- Thorough knowledge of food products and standard recipes
- Ability to read, write, and speak English effectively
- Finger and hand dexterity to operate food machinery
- Knowledge of food and labor cost controls
- Ability to handle physical requirements including lifting up to 200 lbs
Job Duties
- Train, supervise, and work with all chef staff to prepare, cook, create, and present food according to hotel standard recipes
- Assist in controlling food, labor, and departmental expenses
- Assign specific duties to kitchen associates for efficient operation
- Select, train, and supervise kitchen staff in proper preparation of menu items
- Schedule culinary staff to maintain proper coverage while controlling payroll costs
- Ensure proper ordering, receiving, storage, usage, and rotation of food products complying with Health Department regulations
- Adhere to control procedures for cost and quality
- Supervise daily safety and sanitation practices
- Maintain vacation schedule for adequate staffing
- Assist engineering with equipment repair controls and preventative maintenance programs
- Prepare all food items according to recipe specifications
- Perform other duties as assigned such as special events and VIP parties
