Job Requirements

  • High school education preferred
  • Managerial and production experience required in similar hotel or resort
  • 3-5 years management of high volume production of hot and cold food
  • Ability to read, write, and speak English
  • Finger and hand dexterity
  • Ability to lift or move up to 200 lbs on a continuous schedule
  • Knowledge of food and labor cost control methods
  • Additional language skills and basic computer knowledge helpful

Job Qualifications

  • High school education preferred
  • Apprenticeship, post secondary education, or equivalent work experience beneficial
  • Managerial and production experience in hotel or resort kitchens
  • 3-5 years managing high volume production of hot and cold food in upscale or multiple outlet operations
  • Knowledge of food products and standard recipes
  • Ability to read, write, and speak English
  • Finger and hand dexterity for operating food machinery
  • Knowledge of food and labor cost controls

Job Duties

  • Train and supervise kitchen staff to prepare and present food according to standard recipes
  • Assign specific duties to associates for efficient kitchen operation
  • Schedule culinary staff to ensure proper coverage and control payroll costs
  • Ensure proper ordering, receiving, storage, usage, and rotation of food products following health regulations
  • Adhere to cost and quality control procedures
  • Supervise daily safety and sanitation practices
  • Maintain vacation schedule for adequate staffing
  • Assist engineering with equipment repair and preventative maintenance
  • Participate in development and execution of special events and VIP parties
  • Prepare all food items according to recipe specifications
  • Perform other duties as assigned
