Job Requirements

  • Ability to communicate effectively in written and verbal form
  • minimum five years culinary experience
  • one year restaurant management experience with profit and loss responsibility
  • hands-on expertise in kitchen operations across multiple meal services
  • strong communication skills
  • effective time management and independence
  • flexibility to work nights, weekends, and holidays
  • possession or ability to obtain California Food Handler Certification

Job Qualifications

  • Minimum of five years of culinary experience in related fields
  • at least one year of restaurant management experience with P&L responsibility
  • proficiency in fine dining techniques, butchering, baking, sauce preparation, roasting, sautéing, broiling, grilling, and cold food production
  • ability to communicate effectively with guests, team members, and management
  • strong time management skills and ability to work independently
  • flexible schedule availability including nights, weekends, and holidays
  • possession or ability to obtain California Food Handler Certification

Job Duties

  • Redefine hospitality by supporting and promoting Graton Resort & Casino values
  • perform responsibilities according to company standards, policies, and procedures
  • oversee daily kitchen operations including food production, team coordination, and service efficiency
  • direct, mentor, and support kitchen staff ensuring adherence to food preparation standards
  • develop and execute recipes aligned with brand and guest expectations
  • ensure food quality, consistency, taste, presentation, and portion control
  • manage production schedules and coordinate preparation for upcoming events
  • maintain inventory and implement cost control measures
  • participate in budget planning and financial forecasting
  • enforce safety and sanitation standards per health regulations
  • create and manage team schedules for optimal staffing and labor cost control
  • uphold department policies and foster a positive work environment
  • manage performance through feedback, coaching, and corrective actions
  • oversee accurate team member records including attendance and payroll
