Job Requirements
- High school diploma or GED equivalent preferred
- Formal culinary training preferred
- Ability to stand for long periods
- Tolerance for extreme temperatures
- Ability to lift and/or move up to 50 pounds regularly and up to 100 pounds occasionally
- Flexible to work any shift including nights, weekends, and holidays
- Ability to work in environments with second hand tobacco smoke, mechanical parts, and airborne particles
- Native American hiring preference applies

- Possesses effective communication skills
- Successfully passes required background and licensing procedures
Job Qualifications
- Three years experience as a cook in a high-volume restaurant environment
- Proficiency in braising, sautéing, broiling, and poaching
- Skilled in using slicer, mixer, robo coupe, tongs, chef's knife, bread knife, paring knife, steel, spatula, turner, and whisk
- Basic knife skills
- Knowledge of pan and knife types
- Understanding of sanitary practices
- Possession of basic cooking tools
- Working knowledge of weights, measures, and cooking techniques
- Reading and math skills for recipes and measurements
- Knowledge of MSDS program
- Effective communication and organizational skills
- Ability to understand and follow written, oral, or diagram instructions
- Ability to perform mathematical operations with whole numbers, fractions, and decimals
- Successful completion of skill testing or auditions
- Must apply for and maintain a Gaming License from the Tribal Gaming Agency
- Must pass a drug screening test
Job Duties
- Support and uphold Valley View Casino's Standards of Excellence
- Maintain positive guest relations and resolve complaints
- Greet guests with courteous, personalized service
- Provide direction and guidance to kitchen team members
- Organize and delegate tasks to meet deadlines
- Train junior cooks on equipment use
- Communicate with Cook III, Assistant Room Chefs, and Room Chefs
- Prepare food items according to standard recipes and menu
- Apply various cooking techniques including braising, sautéing, broiling, and poaching
- Handle small and sensitive equipment requiring fine motor skills
- Prepare base sauces, stocks, and soups
- Participate in cooking, plating, and assembling food
- Work various kitchen lines as needed
- Operate kitchen equipment like slicers, steamers, fryers, ovens, grills, mixers, kettles, and flat tops
- Maintain knowledge of all food products
- Prepare order lists for recipe preparations
- Perform side work such as restocking supplies
- Control food costs and quality
- Rotate products following first-in, first-out policy
- Label and date products for sanitation
- Check station setup and cleanliness before, during, and after shifts
- Follow health codes and hand washing guidelines
- Observe all safety procedures
- Strive for perfect plate presentation
- Perform other duties as assigned
- Maintain professional and ethical conduct
- Maintain consistent attendance
