Job Requirements

  • Must have 3+ years of pastry experience
  • Firm understanding of pastry production including bread making, viennoiserie, chocolate work, plated desserts, cake making, candies/confections
  • Ability to thrive in fast-paced, high volume environment
  • Strong entrepreneurial spirit and results driven mindset
  • Effective multitasking and business acumen skills
  • Attention to detail and accurate forecasting and preparation
  • Ability to work across departments and outlets including banquet operations
  • Adherence to state sanitation and health regulations
  • Knowledge and ability to maintain and teach proper equipment use
  • Compliance with departmental and resort policies and procedures

Job Qualifications

  • Must have 3+ years of pastry experience with firm understanding of all areas of pastry production including bread making, viennoiserie, chocolate work, plated desserts, cake making, candies/confections
  • Familiar with Word and Excel
  • Basic understanding of food costing
  • Managerial experience in a food service environment

Job Duties

  • Thrive in a fast-paced, high volume work environment with meticulous attention to detail
  • Write prep lists and manage pastry cooks to produce banquet items, wedding and celebration cakes, and in-room amenities referring to BEOs, forecasting, and historical data
  • Oversee plating of breakfast and lunch banquet desserts and organise products needed for PM events
  • Assist in training new team members and developing their core competency on all pastry techniques
  • Develop new seasonal banquet items as well as custom desserts and in-room amenities for holidays
  • Assist in organising all prepared mise en place for various events across the property
  • Track inventory usage and relay necessary orders while assisting with comparative costing and maximising efficient use of products
  • Maintain and strictly abide by state sanitation and health regulations and resort requirements
  • Maintain complete knowledge of correct maintenance and use of equipment and teach this knowledge to new team members
  • Maintain knowledge of and comply with all departmental and resort policies and procedures
