Job Requirements
- must have 3+ years of pastry experience
- strong entrepreneurial spirit

- desire to develop staff to execute quality products
- strong business acumen with attention to detail, forecast accuracy and pace preparation
- adaptable and able to work across all departments servicing multiple outlets and high level/volume banquet operations
- ability to thrive in a fast-paced, high volume work environment

- knowledge of state sanitation and health regulations
- ability to maintain and teach proper use of equipment
- comply with all departmental and resort policies and procedures
Job Qualifications
- must have 3+ years of pastry experience and a firm understanding of all areas of pastry production including bread making, viennoiserie, chocolate work, plated desserts, cake making, candies/confections
- familiar with word, excel, and has a basic understanding of food costing
- managerial experience in a food service environment
Job Duties
- write prep lists and manage pastry cooks to produce all necessary banquet items, wedding and celebration cakes, and in-room amenities
- oversee the plating of breakfast and lunch banquet desserts and organize products needed for evening events
- assist in training new team members and developing their core competency on all pastry techniques
- develop new seasonal banquet items as well as custom desserts and in-room amenities for holidays
- assist in organizing all prepared mise en place as it pertains to various events across the property
- track inventory usage and relay necessary orders appropriately, assist with comparative costing and maximize the efficient use of all products
- maintain and strictly abide by state sanitation and health regulations and resort requirements
