Job Requirements
- Culinary pastry and baking degree or related training in hospitality or restaurant industry
- Three plus years of relevant experience in pastry chef role
- Food Safety Manager Certification required or attainable within 30 days
- Ability to work in a high-pressure, high-temperature kitchen environment
- Capability to lift up to 50 pounds regularly
- Willingness to work varying schedules including over 40 hours per week
- Must maintain confidentiality and security of guest and company information
- Must attend required training and meetings
- Commitment to uphold company safety and sanitation policies
Job Qualifications
- Culinary Pastry & Baking degree or related training equivalent in hospitality/restaurant industry
- Minimum 3 years of relevant work experience in similar scope and title
- Experience within luxury brand or markets preferred
- Food Safety Manager Certification required or to be attained within 30 days
- Proven ability to lead and motivate culinary teams
- Strong written, verbal, and interpersonal communication skills
- Experience in recipe development and menu planning
- Ability to manage budgets and control food and labor costs
- Skilled in sanitation standards and kitchen safety protocols
- Ability to work under pressure and adapt to changing priorities
- Knowledge of culinary industry standards and trends
Job Duties
- Maintain the integrity of the guests' privacy including confidentiality of personal information and key control
- Maintain the integrity of company proprietary information and protect company assets
- Maintain a file of recipes including ingredients, portions, and preparation and presentation directions
- Set standards and methods for portion control with perceived value in mind
- Accountable for meeting budgets for food, labor, and direct operating expenses related to the culinary department
- Develop and follow recipes to prepare and present all dessert, pastry, and bread items including special guest requests
- Cost all food items and assist the Executive Chef with monthly reports
- Create kitchen labor schedules that meet peak performance criteria
- Assist with creation of seasonal, monthly, weekly, and daily specials and menus
- Monitor execution procedures to ensure quality, consistency, efficiency, productivity, and professionalism
- Conduct hands-on teaching and training in kitchen with staff
- Train and educate staff on new menu items and procedural changes
- Hire, coach, counsel and conduct performance evaluations for Pastry Sous Chefs, Supervisors, and Cooks
- Develop, train, and mentor culinary staff
- Implement and maintain sanitation practices and protocol
- Work with management on menu development, staff training, and photo shoots
- Create and monitor kitchen inventory including order inspections and item selection
- Order and maintain kitchen supplies at par levels
- Maintain neat, organized work area adhering to sanitation standards
- Comply with all company safety and security policies
- Attend all training and meetings as directed
- Perform other tasks including cross-training as assigned
