Job Requirements

  • Culinary pastry and baking degree or related training equivalent in hospitality or restaurant industry
  • Minimum 3 years of relevant work experience in a similar scope and title
  • Food Safety Manager Certification required or must be attained within 30 days
  • Ability to work full-time, flexible schedule based on business demands
  • Capability to work in a fast-paced kitchen environment with high temperatures and humidity
  • Physical ability to lift up to 50 lbs regularly
  • Willingness to travel as required by the role
  • Commitment to upholding company safety, security policies, and confidentiality standards

Job Qualifications

  • Culinary pastry and baking degree or related training equivalent in hospitality or restaurant industry
  • At least 3 years of relevant work experience in a similar role
  • Experience within luxury brand or markets preferred
  • Food Safety Manager Certification required or must be attained within 30 days
  • Proven leadership skills with the ability to motivate and manage a cohesive team
  • Strong communication and interpersonal skills
  • Ability to work under pressure and manage multiple priorities
  • Experience with menu development, costing, and inventory management
  • Knowledge of sanitation and safety regulations
  • Ability to prepare a wide range of pastry offerings
  • Skilled in developing and implementing training programs

Job Duties

  • Maintain the integrity of guests' privacy including confidentiality of personal information and key control
  • Maintain the integrity of company proprietary information and protect company assets
  • Maintain a file of recipes including ingredients, portions, and directions for preparation and presentation of each dish
  • Set standards and methods for portion control for each dish on the menu with the perceived value factor in mind
  • Accountable for meeting budgets for food, labor, and direct operating expenses pertaining to the culinary department
  • Develop and follow recipes to prepare and present all dessert, pastry, and bread items including accommodating special guest requests
  • Cost all food items and assist the Executive Chef with monthly reports
  • Create kitchen labor schedules that meet peak performance criteria
  • Assist with the creation of seasonal, monthly, weekly, and daily specials and menus
  • Monitor execution procedures to ensure quality, consistency, efficiency, productivity, and professionalism
  • Conduct hands-on teaching and training in kitchen, working closely with Sous Chefs, Supervisors, and cooks and other staff involved in food preparation and execution
  • Train and educate staff on new menu items and procedural changes
  • Hire, coach, counsel, and conduct performance evaluations for team members
  • Develop, train, and mentor Pastry Sous Chef, Supervisors, and cooks
  • Develop, implement, and maintain sanitation practices and protocol
  • Work with management on menu development, staff training, and photo shoots
  • Create and monitor kitchen inventory including order inspections and item selection
  • Order and maintain kitchen supplies at par levels
  • Maintain a neat and organized work area adhering to sanitation standards
  • Comply with all company safety and security policies and procedures
  • Attend all training and meetings as directed
  • Perform other tasks including cross-training as directed
  • Carry out all other duties as assigned
