Job Duties
- assist the Executive Pastry Chef/Pastry Sous Chef in pastry and baked goods preparation
- train pastry crews and enforce Cherokee standard and team values
- manage pastry shop operations in the absence of Executive Pastry Chef/Pastry Sous Chef
- produce and present pastries at high-quality standards
- maintain production standards across all pastry stations including breads, banquet production, pastry lines, and specialty items
- execute advanced decorating techniques including cake icing, piping decorations, and showpiece creation
- oversee daily pastry production and prepare banquet functions according to event orders
- communicate effectively with maitre d', hostess, banquet captains, assistant managers, banquet manager, and service staff
- manage inventory and establish production plans
- assign production tasks in line with team members' strengths
- assist with food cost controls and proper documentation in FoodTrak
- train, mentor, and evaluate team members, apprentices, and externs
- maintain sanitation, hygiene, and safety standards in the pastry shop
- report equipment issues to maintenance or Executive Chef
- accommodate reasonable special member and guest requests
- uphold professional standards of conduct and appearance
- follow physical demands including bending, stooping, and lifting up to 50 pounds
