Job Duties

  • Plan and prepare pastries, desserts, breads, ice creams, sorbets, creams, simple syrups, jams, and decorative displays
  • Monitor and maintain cleanliness, sanitation, and organization of work areas
  • Abide by state sanitation and health regulations and hotel requirements
  • Meet with pastry chef and sous chef to review assignments and business levels
  • Establish priority tasks and inform pastry chef of supply needs
  • Produce dessert menu items for restaurants, room service, and banquets following recipes and yield guides
  • Create centerpieces for banquets and buffets and display items attractively
  • Inform sous chef of any shortages before items run out
  • Maintain proper storage procedures as required by health department and hotel
  • Review status of work and follow-up actions with pastry chef
  • Maintain positive guest relations
