Job Requirements

  • high school diploma or equivalent
  • 3-5 years cooking experience in upscale, high-volume hotel or restaurant
  • ability to prepare made-from-scratch desserts and breads
  • experience in large-batch banquet production
  • knowledge of food safety and sanitation practices
  • strong communication skills in English
  • excellent customer service skills
  • flexibility to work days, nights, weekends and holidays
  • ability to adhere to safety and cleanliness standards

Job Qualifications

  • 3-5 years cooking experience in upscale, high-volume hotel or freestanding restaurant
  • ability to create and execute made-from-scratch desserts, breads, laminated doughs, plated desserts and large-batch banquet production
  • experience working in high-volume environment servicing multiple outlets including restaurants, room service, weddings and banquets
  • understanding of food cost controls, inventory, par levels of ingredients, waste minimization and production planning for multiple services
  • food safety and sanitation knowledge, ServSafe or equivalent preferred
  • English language communications required
  • excellent customer service skills
  • baking or pastry degree or equivalent formal training preferred
  • requires full availability including days, nights, weekends and holidays

Job Duties

  • Prepare all volume food items according to standard recipes and specifications to ensure consistency of product
  • adhere to control procedures for cost and quality
  • check and control proper storage and rotation of product including portion control to maintain quality
  • practice inventory controls including preparation and pick up of items from storeroom
  • store all food in refrigerated boxes with covers, labels and dates
  • clean walk-ins, reach-in boxes and other equipment ensuring cleanliness, sanitation and working condition
  • maintain work area in a clean condition at all times
  • work varying schedules reflecting business needs of the hotel
  • report promptly all problems or unusual matters of significance to immediate supervisors
  • be polite, friendly, and helpful to guests, management and fellow employees
  • attend all appropriate hotel meetings and training sessions
  • maintain cleanliness and condition of equipment and work area
  • execute emergency procedures according to hotel standards
  • comply with safety regulations and procedures
  • comply with hotel standards, policies and rules
  • recycle whenever possible
  • remain current with hotel information and changes
  • comply with hotel uniform and grooming standards
