Job Requirements
- Pastry diploma or degree preferred
- Minimum of 4-6 years experience with strong working knowledge of cooking, baking and pastry fundamentals
- Ability to obtain Food Handler's Card
- Ability to work flexible schedules including weekends and holidays
- Physical ability to bend, stoop, stand, lift 50 pounds and push carts weighing up to 200 pounds
- Ability to communicate effectively in English
Job Qualifications
- Good knowledge of classical French desserts, chocolate handling and sugar work preferred
- Good knowledge of mixing techniques, recipe preparation, piping, cake building, decorating
- Good knowledge of mousses, custards and sauces
- Knowledge in chocolate tempering, sculpting and sugar working
- Ability to comprehend and execute Banquet Event Orders (BEOs)
- Capable of creating amenities
- Able to handle pop-up events
- Strong knowledge of overnight baking
- Knowledge of restaurant desserts and dessert specials
- Ability to work under pressure and handle multiple tasks
- Knowledge of operating all kitchen and pastry equipment including mixers, tilt skillets, and ice cream machines
- Basic mathematical skills
- Ability to obtain Food Handler's Card
- Ability to bend, stoop, stand, lift 50 pounds and push carts weighing up to 200 pounds
- Ability to speak, read and write English
- Ability to work flexible schedules including weekends and holidays
Job Duties
- Report directly to the Pastry Chef and Sous Chef
- Lead cooks when supervisors are not present
- Prepare all volume food items according to standard recipes and specifications to ensure consistency of product
- Adhere to control procedures for cost and quality
- Check and control proper storage and rotation of products
- Maintain portion control to ensure quality
- Practice inventory controls including preparation and pick up of items from the storeroom
- Store all food in refrigerated boxes with covers, labels, and dates
- Clean walk-ins and reach-in boxes ensuring equipment is clean, sanitary, and in working condition
- Maintain cleanliness of work area at all times
- Work varying schedules reflecting hotel business needs
- Perform all other assigned duties
