Job Requirements
- Pastry diploma or degree preferred
- Minimum of 4 to 6 years of experience in cooking, baking, and pastry
- Ability to bend, stoop, stand, and lift up to 50 pounds
- Ability to push carts weighing up to 200 pounds
- Ability to work flexible schedules including weekends and holidays
- Must be able to obtain Food Handler's Card
- Strong knowledge of kitchen and pastry operations
- Basic math skills
- Proficient English communication skills
Job Qualifications
- Good knowledge of classical French desserts, chocolate handling, and sugar work preferred
- Knowledge of mixing techniques, recipe preparation, piping, cake building, and decorating
- Knowledge of mousses, custards, and sauces
- Knowledge of chocolate tempering, sculpting, and sugar working
- Ability to comprehend and execute banquet event orders (BEOs)
- Ability to create amenities and handle pop-up events
- Strong knowledge of overnight baking
- Knowledge of restaurant desserts and specials
- Ability to work under pressure and manage multiple tasks
- Proficiency in operating kitchen and pastry equipment such as mixers, tilt skillets, and ice cream machines
- Basic mathematical skills
- Ability to obtain Food Handler's Card
- Ability to speak, read, and write English
- Flexibility to work weekends and holidays
Job Duties
- Reports directly to the Pastry Chef and Sous Chef
- Leads cooks when supervisors are not present
- Prepares all volume food items according to standard recipes and specifications
- Adheres to control procedures for cost and quality
- Checks and controls proper storage and rotation of products
- Practices inventory controls including preparation and pick up of items from storeroom
- Stores all food in refrigerated boxes with proper covers, labels, and dates
- Cleans walk-ins, reach-in boxes, and work areas to maintain sanitation
- Maintains clean conditions in assigned areas at all times
- Works varying schedules to meet hotel business needs
- Performs all other assigned duties
