Job Requirements
- Minimum six months experience as a line cook at a 4 or 5 star hotel or restaurant
- culinary certification preferred
- required to speak, read and write English
- must be able to perform job functions with attention to detail, speed and accuracy
- must be able to prioritize, organize and follow-up
- ability to work with minimal supervision
- physical ability to lift up to 50 pounds
- ability to communicate satisfactorily with guests and co-workers
- must maintain confidentiality of guest information and hotel data
- ability to endure various physical movements throughout work areas
Job Qualifications

Job Duties
- Maintain complete knowledge of and comply with all departmental policies, service procedures and standards
- ensure that standards are maintained at a superior level on a daily basis
- maintain and strictly abide by state sanitation/health regulations and hotel requirements
- maintain complete knowledge of correct maintenance and use of equipment
- use equipment and tools only as intended, properly and safely
- meet with Kitchen Supervisor to review assignments, anticipated business levels, changes and other information pertinent to the job performance
- complete opening duties including setting up workstation, inspecting cleanliness and working condition of tools and equipment
- start prep work and production of items needed for the day
- select, clean and prepare meat, seafood and vegetables
- prepare and produce sauté, grill and sauce from menu items for designated Food & Beverage outlets
- inform the Kitchen Supervisor of any shortages
- communicate assistance needed during busy periods
- maintain proper storage procedures
- minimize waste and maintain controls to attain forecasted food cost
- disinfect and sanitize cutting boards and worktables
- transport empty, dirty pots and pans to potwash station
- assist stewards for efficient cleanup
- complete closing duties including returning food items to proper storage, rotating products, wrapping, covering, labeling and dating items, cleaning prep areas, and restocking items
- exhibit a friendly, helpful and courteous manner when dealing with guests and fellow employees
