Job Requirements

Job Qualifications
- 1-5 years of previous experience in a high volume kitchen or full-service hotel
- excellent understanding of various cooking methods, ingredients, equipment and procedures
- great personal hygiene and grooming standards
- able to communicate, read and write clearly and effectively
- general knowledge of cooking temperatures, baking, cake and cookie preparation
- ability to operate kitchen equipment such as mixers, ovens, and fryers
- strong organizational skills and ability to work well under pressure
- teamwork and effective communication skills
Job Duties
- provides the highest and most efficient level of hospitality service to members
- works in the designated station as set by Chef Patissier or Pastry Sous Chef
- organizes the assigned work area and efficiently puts away orders
- prepares and sells food within recommended periods to meet members expectations
- operates kitchen equipment including mixers, baking ovens, stoves, sheeters, and fryers
- produces quality products in a timely and efficient manner
- maintains cleanliness and sanitation at the work area
- prepares and cooks all food items by the recipe, specification and yield guide
- prepares ingredients for cooking, including portioning, chopping, and storing food
- adheres to quality, presentation standards, food preparation checklists and breakdowns
- prepares, seasons, and cooks a wide variety of cakes, custards, cookies, breakfast items and other food items
- prepares ingredients using a full range of cooking methods
- weighs, measures and mixes ingredients on correct proportions
- has general knowledge of cooking temperatures, making cakes and cookies, preparing custards, fruit preparation and a la minute cooking
- sets up the station with par stocks of menu items and prepares the dishes designated for that station
- checks supplies and prep lists ensuring all items are prepped timely
- replenishes service lines as needed, restocks and prepares the workstation for next shift
- ensures all products are stored properly in correct location and appropriate levels
- communicates assistance needed during busy periods and reports incidents to Chef Patissier or Pastry Sous Chef
- checks and ensures correctness of temperature of appliances and food
- serves food in proper portions onto correct serving vessels and plates
- washes and disinfects kitchen area, workstations, tables, tools, knives and other equipment
- maintains correct portion size and quality of food to club standards
- minimizes waste and maintains controls to attain forecasted food cost
- reviews work status and follow-up actions required with Chef Patissier or Pastry Sous Chef before leaving
- assists in providing on the job training and development of new cooks
- assists other team members in the kitchen as needed or performs other tasks assigned by management
