Job Requirements

  • culinary experience
  • flexible availability to work long hours
  • ability to exert medium work force up to 50 pounds occasionally and 20 pounds frequently

  • knowledge of cooking techniques and food preparation

Job Qualifications

  • experience in a hotel or related field preferred
  • culinary experience required
  • flexible and able to work long hours
  • medium work capacity with ability to exert up to 50 pounds of force occasionally and 20 pounds frequently
  • ability to stand during entire shift
  • ability to withstand temperature variations
  • thorough knowledge of menus and hotel-standard preparation
  • proficiency in charbroiling, poaching, deep-frying, saute, braising, roasting, and par-cooking techniques
  • knowledge of herbs and spices and their proper use

Job Duties

  • Maintain cleanliness and organization of all storage areas
  • complete necessary food and station preparation prior to the opening of the restaurant to ensure prompt and efficient guest service during operating hours
  • prepare and display buffet food items according to hotel standards
  • recognize quality standards in fresh vegetables, fish, dairy, and meat products
  • maintain a clean and sanitary environment with proper handling, storage, and sanitation practices
  • prepare food for banquets following Banquet Event Orders
  • prepare and service food for the Employee Cafeteria as specified by supervision
  • prepare all foods following hotel standard recipes and under direction for specials
  • breakdown buffets and kitchen line, storing food and equipment properly at the end of meal periods
  • work banquet food station as scheduled
  • know the location and proper operation of all fire extinguishing equipment
  • practice safe work habits to avoid injury
  • use Production Charts as specified
  • support any kitchen position needing help
  • follow all Health Department and Company food and storage regulations
  • operate and maintain cleanliness of all kitchen equipment
  • maintain a 'Clean As You Go' policy
  • assist in storage and rotation of food according to procedures
  • sign keys out and in under supervision as needed
