Job Requirements
- Minimum of 4-6 years experience with strong knowledge of cooking, baking and pastry fundamentals
- Pastry diploma or degree preferred
- Ability to work varying schedules including weekends and holidays
- Must obtain Food Handler's Card
- Physical ability to bend, stoop, stand and lift up to 50 pounds and push carts up to 200 pounds
- Ability to communicate effectively in English
Job Qualifications
- Good knowledge of classical French desserts, chocolate handling and sugar work preferred
- Good knowledge of mixing techniques, recipe preparation, piping, cake building and decorating
- Good knowledge of mousses, custards and sauces
- Good knowledge of chocolate tempering, sculpting and sugar working
- Ability to comprehend and execute BEOs
- Ability to create amenities
- Able to handle pop up baking
- Strong knowledge of overnight baking
- Knowledge of restaurant desserts and special desserts
- Ability to work under pressure and handle multiple tasks
- Knowledge of operating kitchen and pastry equipment including mixers, tilt skillets, and ice cream machine
- Basic mathematical skills
- Must be able to obtain Food Handler's Card
- Ability to bend, stoop, stand, lift up to 50 pounds and push carts up to 200 pounds
- Ability to speak, read and write English
- Ability to work a flexible schedule including weekends and holidays
Job Duties
- Report directly to the Pastry Chef and Sous Chef
- Lead cooks when supervisors are not present
- Prepare all volume food items according to standard recipes and specifications to ensure product consistency
- Adhere to control procedures for cost and quality
- Check and control proper storage and rotation of products, monitor portion control to maintain quality
- Practice inventory controls including preparation and pick up of items from storeroom
- Store all food in refrigerated boxes with covers, labels, and dates
- Clean walk-ins and reach-in boxes to ensure equipment and work areas are clean, sanitary and comply with health regulations
- Maintain area cleanliness at all times
- Work varying schedules reflecting hotel business needs
- Perform all other assigned duties
- Notify immediate supervisors promptly of problems or unusual matters
- Be polite, friendly, and helpful to guests, management, and fellow employees
- Attend all hotel meetings and training sessions
- Maintain equipment and work area excellence
- Execute emergency procedures per hotel standards
- Comply with safety regulations and hotel policies
- Recycle whenever possible
- Stay current with hotel information and changes
- Comply with uniform and grooming standards
