Job Requirements
- Have a genuine interest in a maritime career and be willing to live and work onboard a Disney Cruise Line vessel
- be ready to perform safety roles and responsibilities as specified in the ship's Assembly Plan
- uphold safety management responsibilities in operations you oversee
- be open to sharing a cabin with other crew members and appreciate working in a diverse environment with strict regulations
- hold a valid passport and C1/D Seaman's visa (DCL will assist in the documentation process)
- complete a pre-employment medical examination
- obtain a criminal background check
- bring approved work shoes
- understand Disney Cruise Line is a drug-free workplace and adhere to drug/alcohol testing policies
Job Qualifications
- A minimum of four years of leadership experience in a fine dining patisserie, equivalent to a 1-star Michelin standard or higher
- strong training and skills in Western/European fine dining
- a deep understanding of food and beverage products, services, and equipment
- excellent written and verbal communication skills
- proficient in budget analysis, cost projections, and their impact
- ability to create high-quality menus based on themes and seasonal ingredients
- skill in creating, costing, and training the team on high-standard recipes
- possession of Executive Pastry Chef (CEPC) certification is preferred
- prior experience working on a ship is preferred
Job Duties
- Lead, train, and develop team members to achieve exceptional product quality and service standards through hands-on mentorship
- drive the promotion of outstanding products and innovative production while managing costs, inventory, and revenue
- oversee all pastry and bakery offerings at Remy, including special requests
- invent new flavor combinations and culinary experiences to excite our guests
- develop strategies to exceed guests' expectations and enhance their dining experience
- establish and uphold high culinary standards for pastry and bakery offerings in Remy/Enchanté
- ensure meticulous quality control for all pastry and bakery items served
- maintain compliance with Disney Cruise Line and USPH Sanitation requirements in your area of responsibility
- conduct personal food and menu audits regularly
- supervise the handling, maintenance, and reordering of necessary equipment
