Job Duties

  • Oversee all pastry operations within the restaurant
  • develop, test, and implement seasonal dessert menus, petit fours, and bread offerings
  • ensure consistency and quality in pastry preparation and presentation
  • collaborate with the savory kitchen and Beverage Director for menu harmony and pairing
  • manage ingredient sourcing, ordering, and inventory with an emphasis on quality and sustainability
  • maintain food safety, sanitation, and allergen protocols
  • lead, train, and mentor the pastry team to uphold technical precision and creativity
  • establish and maintain pastry standards, recipes, plating guides, and SOPs
  • participate in menu tastings, research and development sessions, and creative program refinement
  • oversee cost control, waste reduction, and operational efficiency within the pastry department
  • maintain a clean, organized, and safe kitchen environment meeting all regulatory standards
  • provide daily feedback and performance evaluations to staff
  • partner with HR and culinary leadership on hiring, onboarding, scheduling, and disciplinary matters
