Job Duties
- Oversee all pastry operations within the restaurant
- develop, test, and implement seasonal dessert menus, petit fours, and bread offerings
- ensure consistency and quality in pastry preparation and presentation
- collaborate with the savory kitchen and Beverage Director for menu harmony and pairing
- manage ingredient sourcing, ordering, and inventory with an emphasis on quality and sustainability
- maintain food safety, sanitation, and allergen protocols
- lead, train, and mentor the pastry team to uphold technical precision and creativity
- establish and maintain pastry standards, recipes, plating guides, and SOPs
- participate in menu tastings, research and development sessions, and creative program refinement
- oversee cost control, waste reduction, and operational efficiency within the pastry department
- maintain a clean, organized, and safe kitchen environment meeting all regulatory standards
- provide daily feedback and performance evaluations to staff
- partner with HR and culinary leadership on hiring, onboarding, scheduling, and disciplinary matters
