Job Requirements
- Degree in hotel or restaurant management preferred
- Minimum of 5 years experience in a fine dining restaurant environment
- Minimum of 2 years experience in a high-volume preparation environment
- Fully competent in all aspects of baking and pastry
- Ability to understand complex instructions and material
- Ability to handle multiple tasks
- Ability to remain on feet for entire shift
- Ability to lift and move up to 50 pounds
- Ability to work assigned schedule including nights, weekends, holidays, and extended hours
- Flexibility to work extended hours
- Ability to work in a team environment

Job Duties
- Assist with the development of standardized recipes for all menu items
- Ensure that all food products prepared meet established specifications and standards
- Ensure proper levels of bakery and pastry items are prepared based on forecasted needs and delivered promptly
- Assign tasks effectively for efficient use of labor and timely production
- Maintain cleanliness and organization of pastry department and bakery areas
- Stay updated on industry trends in pastry and baking
- Bake fresh pastries, desserts, and bread for all outlets
- Act as a manager, team leader, and motivator for the pastry department
- Recommend improvements to production methods, equipment performance, scheduling, and quality control
- Maintain a sanitary, neat, clean, organized, safe, and comfortable environment for employees and guests
- Review menu items and make changes as necessary utilizing leftovers
- Ensure kitchen equipment is clean, functional, and safely handled
- Create recipe cards and train bakers accordingly
- Assist Executive Chef with annual budget process and bakery department recommendations
- Enforce health, safety, and sanitary regulations according to health department and risk management guidelines
- Attend meetings and training sessions as required
- Perform other duties as assigned
