Job Requirements
- Associate degree in pastry arts or related field
- Certification in Serve Safe food handling
- Minimum three years pastry chef experience in similar hotel or restaurant
- Knowledge of kitchen operations and safety protocols
- Ability to lead and mentor staff effectively
- Strong communication and organizational skills
- Familiarity with budgeting and financial reporting
- Availability for flexible scheduling and high demand periods
Job Qualifications
- AAS pastry degree or ACF certified apprenticeship program
- Serve Safe certified
- Three years of experience as a pastry chef in an equal caliber property
- Understanding of restaurant, room service, bar, and banquet procedures
- Effective decision-making skills
- Strong customer and associate relation skills
- Knowledge of overall hotel operations related to the kitchen
- Good presentation and platform skills
- Good communication skills including verbal, listening, and writing
- Strong organizational skills
- Effective conflict management skills
- Effective change management skills
- Good training and facilitator skills
- Knowledge of purchasing, inventory controls, supplies, and equipment
- Knowledge of governmental regulations and safety standards such as OSHA, EPA, ADA, CFC, NFPA
- Experience with financial management including P&L statements, operating budgets, forecasting, and scheduling
Job Duties
- Perform duties of hiring, training, and mentoring all new pastry associates
- Assist during high demand times
- Help train associates in Gold Key/PHR safety procedures and supervise execution of departmental and hotel emergency procedures
- Supervise daily operation of the pastry kitchen
- Oversee preparation and production of pastry items
- Consult and assist executive chefs in developing new pastry items and menus
- Ensure completion of pastry team duties to meet quality standards
- Maintain food handling and sanitation standards
- Develop and enforce cleaning schedules
- Coordinate with banquet chefs for timing of events and meals
- Work with catering and sales team for specialty cakes and pastry items
- Operate department equipment and report malfunctions
- Supervise staffing levels to meet guest service and operational needs
- Implement Gold Key/PHR safety standards
- Ensure associates have proper supplies, equipment, and uniforms
- Communicate and follow up on areas needing attention
- Participate in investigation of associate accidents
- Comply with loss prevention policies
- Collaborate with recruiters on hiring guidelines
- Ensure clean and safe kitchen environments
- Coordinate with banquet team for food preparation and equipment handling
- Maintain back dock cleanliness
- Manage supply levels of food, cleaning, and paper products
- Ensure compliance with safety and hazardous material management procedures
