Job Requirements
- Demonstrate a genuine interest in a career at sea and willingness to live and work onboard a Disney Cruise Line vessel
- Be ready to engage in safety roles and provide emergency assistance as specified in the ship Assembly Plan
- Uphold general safety responsibilities as outlined in the Safety Management System in areas of control
- Be comfortable sharing a cabin with other crew members and embracing a multicultural work environment with strict regulations
- Possess a valid passport and C1/D Seaman's visa (Disney Cruise Line will supply necessary documents)
- Complete a pre-employment medical examination
- Obtain a criminal background check
- Provide own approved work shoes
- Willingness to comply with drug and alcohol testing requirements
- Maintain a minimum of four years leadership experience in fine dining patisserie
- Expertise in Western and European fine dining styles
- Strong knowledge of food and beverage products, services, and equipment
- Excellent communication skills
- Ability to manage cost control and inventory
- Proficiency in menu creation and recipe development
Job Qualifications
- A minimum of four years of leadership experience in a fine dining patisserie, ideally at a Michelin-starred establishment or higher
- Strong expertise in Western/European fine dining styles
- Comprehensive knowledge of food and beverage products, services, and equipment
- Excellent verbal and written communication skills
- Proficient in calculating and identifying cost control potential and understanding budget impacts
- Ability to create, write, and implement high-quality menus based on themes and seasonal availability
- Skilled in developing and costing recipes, alongside training the team to achieve high standards
- Executive Pastry Chef (CEPC) certification preferred
- Previous experience working on a ship preferred
Job Duties
- Train and mentor team members to achieve top-quality product and service standards through engaged leadership
- Promote outstanding products, foster innovative production methods, and manage cost control and inventory to drive revenue
- Oversee the pastry and bakery offerings at Remy, including special requests
- Create new and exciting flavor combinations and culinary experiences that delight guests
- Develop strategies to thoroughly exceed guest expectations
- Maintain and elevate culinary standards in Remy/Enchante
- Oversee the expediting process and ensure final quality control of all pastry and bakery offerings served
- Ensure compliance with Disney Cruise Line and US Public Health Sanitation requirements
- Conduct personal random food and menu audits
- Monitor the handling, maintenance, and reordering of operational equipment
