Job Requirements

  • Education in culinary arts or relevant field preferred
  • Minimum three years of culinary management experience in contract foodservice, fine dining, or restaurant
  • Working knowledge of HACCP requirements
  • Ability to manage inventory, ordering, and receiving effectively
  • Strong leadership skills with experience managing kitchen or pastry staff
  • Passion for sustainability practices
  • Excellent communication skills
  • Ability to develop menus and cost controls
  • Knowledge of food safety standards
  • Ability to maintain kitchen sanitation and equipment standards
  • Flexibility to perform other assigned duties as needed

Job Qualifications

  • Must have a working knowledge of HACCP
  • Three years of culinary management experience in contract foodservice, fine dining setting, or restaurant with inventory and purchasing knowledge and control
  • Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  • Experience with exposition cooking
  • Knowledge of P&L accountability and contract-managed service experience is desirable
  • ServSafe certified is a plus

Job Duties

  • Full culinary management of food service operation to include inventory, ordering and receiving
  • Knowledge of P&L accountability and contract-managed service experience is desirable
  • Proficient in menu development, cost controls, purchasing and inventory with a focus on sourcing and utilizing local food products
  • Possesses a passion for sustainability
  • Supervises the daily production and distribution of all pastries, desserts and baked goods
  • Ensures recipes and standards are followed, food costs are controlled and appropriate quantity is prepared based on established production needs
  • Ensures proper food handling, presentation, portion control and maintenance of proper serving temperatures
  • Monitors and controls the maintenance and sanitation of the pastry kitchen and equipment to ensure a work environment that meets or exceeds federal, state and corporate standards and regulations
  • Supervises hourly kitchen/pastry associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action, as appropriate
  • Helps plan and implement seasonal menus
  • Orders and maintains pastry supplies and products to ensure appropriate inventory levels
  • Performs other duties as assigned
