Job Requirements

  • High school diploma or equivalent
  • five years’ experience in restaurant and pastry or culinary education with minimum three years’ experience in restaurant and pastry
  • ability to write and speak clearly and effectively
  • ability to compose effective recipes
  • ability to communicate effectively with guests, managers and team members
  • ability to convert recipes into larger and smaller batches
  • thorough understanding of weights, measures and conversion of both
  • ability to exercise judgment and make decisions based on job knowledge and company goals
  • ability to safely operate company vehicle or golf cart
  • ability to lift up to 50 lbs
  • ability to stand entire shift
  • ability to bend, stoop and reach constantly

Job Qualifications

  • Five years’ experience in restaurant and pastry or culinary education and a minimum of three years’ experience in restaurant and pastry
  • high school diploma or equivalent

  • ability to communicate effectively with guests, managers and team members
  • ability to convert recipes into larger and smaller batches

Job Duties

  • Cleanliness and organization of bakeshop
  • communication and ordering of all pastry specific supplies and equipment
  • proper rotation and monitoring of raw and finished products
  • overseeing all production of breakfast pastries, breads, lunch and dinner desserts
  • management of production schedule
  • management of staff work schedule
  • full creative responsibility in menu development under guidance from Executive Chef
  • represent Blackberry Mountain in cooking schools, public events and media situations
  • coordination with Executive Chef of daily needs of restaurant operation, especially pertaining to bakeshop
  • training of all pastry team members and other kitchen staff where necessary
  • overseeing pastry employee tier systems and reviews
  • maintaining current seasonal dessert rotation
  • recipe costing
