Job Requirements
- High school diploma or equivalent
- Minimum 5 years' experience in restaurant and pastry or culinary education with at least 3 years of relevant pastry experience
- Must be able to write and speak clearly and effectively
- Must be able to compose effective recipes
- Must be able to communicate effectively with guests, managers and team members
- Must be able to convert recipes into larger and smaller batches
- Thorough understanding of weights, measures and conversion
- Ability to exercise judgment and make decisions based on job knowledge and company goals
- Ability to perform heavy lifting up to 50 lbs
- Ability to work entire shifts standing
- Frequent bending, stooping and reaching
- Ability to safely operate company vehicles or golf carts
Job Qualifications
- 5 years' experience in restaurant and pastry or culinary education and a minimum of 3 years' experience in restaurant and pastry
- High school diploma or equivalent
- Must be able to write and speak clearly and effectively
- Must be able to compose effective recipes
- Must be able to communicate effectively with guests, managers and team members
- Must be able to convert recipes into larger and smaller batches
- Must thoroughly understand weights, measures and conversion of both
- Must be able to exercise judgment and make decisions based on job knowledge and awareness of company goals
Job Duties
- Cleanliness and organization of bakeshop
- Communication and ordering of all pastry specific supplies and equipment
- Proper rotation and monitoring of raw and finished products
- Overseeing all production of breakfast pastries, breads, lunch and dinner desserts
- Management of production schedule
- Management of staff work schedule
- Full creative responsibility in menu development under guidance from Executive Chef
- Represent Blackberry Mountain in cooking schools, public events and media situations
- Coordination with Executive Chef of daily needs of restaurant operation, especially pertaining to bakeshop
- Training of all pastry team members and other kitchen staff where necessary
- Overseeing pastry employee tier systems and reviews
- Maintaining current seasonal dessert rotation
- Recipe costing
