Job Requirements

  • High school diploma or equivalent
  • Minimum 5 years' experience in restaurant and pastry or culinary education with at least 3 years of relevant pastry experience
  • Must be able to write and speak clearly and effectively
  • Must be able to compose effective recipes
  • Must be able to communicate effectively with guests, managers and team members
  • Must be able to convert recipes into larger and smaller batches
  • Thorough understanding of weights, measures and conversion
  • Ability to exercise judgment and make decisions based on job knowledge and company goals
  • Ability to perform heavy lifting up to 50 lbs
  • Ability to work entire shifts standing
  • Frequent bending, stooping and reaching
  • Ability to safely operate company vehicles or golf carts

Job Qualifications

  • 5 years' experience in restaurant and pastry or culinary education and a minimum of 3 years' experience in restaurant and pastry
  • High school diploma or equivalent
  • Must be able to write and speak clearly and effectively

  • Must be able to communicate effectively with guests, managers and team members
  • Must be able to convert recipes into larger and smaller batches
  • Must thoroughly understand weights, measures and conversion of both
  • Must be able to exercise judgment and make decisions based on job knowledge and awareness of company goals

Job Duties

  • Cleanliness and organization of bakeshop
  • Communication and ordering of all pastry specific supplies and equipment
  • Proper rotation and monitoring of raw and finished products
  • Overseeing all production of breakfast pastries, breads, lunch and dinner desserts
  • Management of production schedule
  • Management of staff work schedule
  • Full creative responsibility in menu development under guidance from Executive Chef
  • Represent Blackberry Mountain in cooking schools, public events and media situations
  • Coordination with Executive Chef of daily needs of restaurant operation, especially pertaining to bakeshop
  • Training of all pastry team members and other kitchen staff where necessary
  • Overseeing pastry employee tier systems and reviews
  • Maintaining current seasonal dessert rotation
  • Recipe costing
