Job Requirements

  • Minimum of two years of experience in a high-volume banquet kitchen
  • Superior knife skills and experience with butchery
  • California Food Handler's Card required
  • Strong knowledge of proper food handling and sanitation standards
  • Excellent critical thinking and time management skills
  • Flexible schedule as overtime may be required
  • Ability to carry, lift, push, and pull up to 40 lbs
  • Ability to bend and stoop regularly
  • Ability to work with grills, ovens, and stovetops
  • Weekend availability
  • Night shift availability

Job Qualifications

  • Minimum of two years of experience in a high-volume banquet kitchen

  • Well versed in cooking temperatures
  • California Food Handler's Card required
  • Strong knowledge of food handling and sanitation standards
  • Excellent critical thinking and time management skills
  • Bilingual Spanish preferred but not required
  • Flexible schedule availability

Job Duties

  • Maintain high standards of personal appearance and grooming including wearing proper uniform
  • Have thorough knowledge of menus and preparation required according to hotel standards
  • Comply with certification requirements including Food Handlers Safety
  • Prepare food items according to guest orders following recipe cards, production, portion, and presentation standards
  • Start food items prepared ahead without exceeding estimated needs
  • Maintain post on kitchen line during operating hours ensuring efficiency, productivity, and quality
  • Prepare banquet food following specifications of Banquet Event Orders
  • Operate, maintain, and clean kitchen equipment including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill
  • Understand ingredients, products, and equipment
  • Operate standard kitchen equipment safely and efficiently
  • Clean and maintain station practicing good safety and sanitation
  • Assist with cleaning and organization of kitchen and equipment
  • Restock items as needed
  • Practice safe work habits to avoid injury
