Job Requirements
- Ability to lift and carry up to 50 pounds
- Ability to stand and move for long periods
- Ability to bend, kneel, stoop, reach and squat frequently
- Effective communication skills
- Ability to taste and distinguish flavors, spices, temperatures and odors
- Ability to work in environments with extreme temperatures, loud noise, fumes and odors
Job Qualifications
- High school diploma or equivalent
- Previous experience in food preparation or culinary role preferred
- Knowledge of food safety and sanitation standards
- Ability to follow detailed recipes and procedures
- Strong organizational and time management skills
- Ability to work effectively in a team environment
- Good communication skills
Job Duties
- Reports to work on time and is on the pantry station as indicated on the weekly work schedule
- Uniform meets PML requirements and is maintained clean
- Practices positive personal hygiene and cleanliness habits during all work shifts
- Sets-up the pantry station including all cold food items, preparation equipment, smallwares, plateware, food ingredients, garnishes and supplies
- Follows the Pantry Station Checklist for station set-up and stocking
- Reports any problems or discrepancies to the Chef promptly
- Assists other kitchen personnel in food preparation and sidework as assigned
- Prepares all food products according to the standards and procedures on PML recipe cards
- Prepares and cooks all food according to PML specifications, recipes, procedures, plate presentation and quality standards
- Checks par and stock levels of all salad ingredients, cold appetizers, dessert items, condiments, garnishes, equipment, chilled plates and service plateware prior to shift
- Maintains sufficient back-up par levels
- Communicates discrepancies to the Chef
- Prepares vegetables for salads, portions and plates salads and desserts ensuring all food meets PML standards
- Coordinates with broiler and side cooks to ensure food is ready at the correct time
- Rotates and restocks all pantry food items, condiments, plateware, smallwares, equipment and supplies throughout the shift
- Maintains highest degree of sanitation, cleanliness and food safety
- Adheres to safety guidelines and immediately reports any unsafe conditions, accidents or injuries
- Completes all station closing duties at end of shift
- Assists Kitchen Manager and other kitchen personnel with closing duties and cleanliness
