Job Requirements

  • High school diploma or equivalent
  • Ability to stand, bend, lift frequently up to 35 pounds and occasionally up to 50 pounds
  • Professional communication skills
  • Ability to work long hours including weekends
  • Ability to maintain exceptional hygiene and grooming
  • Ability to follow written and verbal instructions
  • Willingness to work in a kitchen environment
  • Ability to handle physical demands such as kneeling and walking throughout the shift

Job Qualifications

  • High school diploma or equivalent
  • Previous experience in a commercial kitchen preferred
  • Basic knife skills preferred
  • Knowledge of standard cooking methods preferred
  • Ability to understand and apply written and verbal instruction
  • Previous shucking experience preferred
  • Strong communication skills
  • Ability to maintain hygiene and grooming standards
  • Ability to work in a fast-paced environment
  • Knowledge of HACCP sanitation procedures

Job Duties

  • Shucks fresh oysters preparatory to fresh packing
  • Holds shellfish firmly and forces shucking knife between halves of shell at hinge juncture
  • Twists knife to sever muscles holding shell closed and pries open
  • Cuts shellfish from shell and serves it on appropriate tray
  • May break off edges of shells before shucking
  • Cleans and prepares shellfish for serving to customers
  • Sprays shellfish when needed
  • Ensures oyster bar is properly prepared based on established procedures
  • Provides assistance to kitchen manager and kitchen staff with food preparation
  • Follows established recipes and plating requirements as set by GCRG
  • Rotates oysters daily with the oldest on top
  • Provides fast and accurate shucking of oysters
  • Restocks all items through each shift
  • Ensures all tools and equipment are properly stored and safely used
  • Ability to follow daily HACCP sanitation procedures
  • Follows all relevant health department rules and regulations
  • Stores oyster tags as manager request
