Job Qualifications

  • At least 5 years of progressive experience in a hotel, restaurant, or related field
  • or a 2-year college degree and 3 or more years of related experience
  • or a 4-year college degree and at least 1 year of related experience
  • Supervisory experience
  • Proficient in Windows operating systems, spreadsheets, and word processing
  • Clear communication skills
  • Ability to evaluate and select from alternatives quickly and accurately
  • Capability to work effectively under high-pressure situations
  • Maintain composure and objectivity under pressure
  • Effective problem-solving skills in the workplace
  • Ability to assimilate complex information and adjust to meet needs
  • Strong listening and conflict resolution skills

Job Duties

  • Approach all encounters with guests and employees in an attentive, friendly courteous and service-oriented manner
  • Maintain regular attendance in compliance with company standards as required by scheduling
  • Meet and communicate with Director of Food & Beverage weekly
  • Maintain high standards of personal appearance and grooming per brand standards
  • Comply with all standards and regulations to encourage safe and efficient hotel operations
  • Ensure training of all Food and Beverage personnel using effective training steps
  • Maintain follow-through of all guest requests, problems, complaints and/or accidents in Restaurant, Room Service, VIP M-Club and Bar
  • Motivate, coach, counsel and discipline all F&B personnel according to company SOPs
  • Review F&B staff's worked hours for payroll
  • Attend weekly staff meetings and provide training on a rotational basis
  • Prepare and conduct F&B interviews in coordination with HR
  • Prepare employee shift schedule according to business forecast and payroll budget
  • Ensure wage progress and productivity reports are completed accurately
  • Assist in developing and implementing Food and Beverage promotional ideas
  • Ensure beverage costs are maintained to meet budget
  • Focus F&B Department on contributing to guest service scores
  • Maintain company SOPs regarding purchase orders and accounting
  • Develop, initiate and promote sales including upselling programs
  • Ensure service standards are maintained throughout the Food and Beverage Department
  • Participate in required MOD coverage
  • Initiate necessary F&B-related reports according to company standards
  • Ensure F&B employees are always attentive, friendly, helpful, and courteous
  • Ensure quarterly operating equipment inventory is done, pars evaluated and purchases planned
  • Maintain all brand SOPs concerning credit policies
  • React to negative marketplace trends by implementing blitzes and promotions
  • Organize and conduct monthly department meetings
  • Attend BEO and other leadership meetings as scheduled
  • Conduct monthly beverage inventories and reconciliations
  • Ensure quality and presentation of all food products meet brand and company standards
  • Promote open communication lines with managers, employees, and departments
  • Use POS system to print and analyze reports
  • Establish and maintain key control system
  • Monitor and follow up on all F&B cash overages and shortages
  • Assist Director of F&B, General Manager and Engineering in emergency procedures
  • Maintain organized filing system for documentation
  • Complete all correspondence timely
  • Attend monthly all-employee meetings
  • Provide motivating influence and seek employee input
  • Ensure positive communication between Food & Beverage and Food Production staff
  • Perform POS changes in menus and server lists as needed
  • Oversee daily bar functions ensuring service and quality
  • Create and update beverage menus based on trends and costs
  • Oversee inventory and implement waste reduction strategies
  • Ensure adherence to TABC and company policies regarding alcohol service
  • Train bar and service staff on product knowledge and upselling
  • Conduct tastings, recipe checks, and bar audits
  • Handle Lost and Found items per standards
  • Maintain required stock pars
  • Review food sales daily
  • Perform additional duties as requested by Food and Beverage Director or General Manager.
