Job Requirements

High school diploma or equivalent
passing a 20 year background check including FBI fingerprint-based criminal history check
ability to stand, bend, lift, and move for over 10 hour shifts
ability to lift over 25 pounds
willingness to work a rotating schedule over 55 hours per week
compliance with company policies and procedures
complete all company required training
availability for up to 25 percent travel
ability to communicate effectively with all employee levels
strong leadership capability
ability to manage up to 40 direct reports

Job Qualifications

Associates degree in Culinary Arts or Culinary Arts certification preferred
minimum 1-3 years of experience as a Chef or Sous Chef
minimum 7 years of experience as a cook
previous supervisory experience in high volume, manufacturing, food production, restaurant, or catering preferred
in-flight catering or high-volume food service experience preferred
ability to cook meals according to detailed specifications
ability to work in fast paced, deadline driven environment
strong and effective leadership skills
current or previous labor relations experience a plus
ability to train others
ability to provide constructive feedback
excellent time management
strong organizational, analytical, communication, and leadership skills
innovative and able to improve operations
experience with menu design a plus
basic computer skills and working knowledge of Microsoft Office preferred
ServSafe Certified preferred
excellent written and oral communication skills
bilingual in Spanish a plus

Job Duties

Assist the Executive Sous Chef or Executive Chef in meal design and preparation
provide culinary expertise and leadership and promote quality food services
ensure food safety and sanitation compliance
drive food production with Food Supervisors assistance
ensure food specifications and labor objectives meet company and customer requirements
supervise department for quality and quantity and adhere to governmental regulations
manage employee attendance, shift setup, and scheduling
order raw materials and produce extra meals as needed
prepare daily production sheets and assign tasks
train employees on proper preparation procedures
maintain safety and cleanliness throughout shifts
manage daily production of hot and cold kitchens for quality and consistency
ensure compliance with wage and hour policies including meal and rest breaks
train and monitor employees for productivity and cost control
monitor manpower planning and employee scheduling
coach, counsel, and prepare corrective actions in compliance with collective bargaining agreements
review employee pay and job titles for accuracy
complete company required training including ServSafe
comply with company policies and procedures
