Job Requirements
- BA or BS degree preferred
- Minimum 3-5 years management experience in food and beverage
- Minimum 5 years experience in high-volume banquet, concessions, or catering operations
- Previous catering sales experience preferred
- Previous concessions management experience preferred
- Ability to communicate clearly and professionally
- Ability to make fast, sound business decisions
- Proficiency in English
- Knowledge of Microsoft Office and POS systems
- Ability to work in a fast-paced team environment
- Familiar with inventory and menu planning
- Knowledge of sanitation and safety standards
- Math proficiency
- Cash handling skills
- High standards of ethics and confidentiality
- Ability to work independently
Job Qualifications
- BA or BS with business-related or hospitality management major strongly preferred
- Minimum 3-5 years management experience in food and beverage industry
- Minimum 5 years experience in high-volume banquets, concessions, a la carte restaurant catering, or premium suite catering experience
- Previous professional experience with catering sales strongly preferred
- Previous experience managing concessions operations (arena, stadium, amphitheater experience strongly preferred)
- Ability to communicate clearly and professionally fostering a positive work environment
- Ability to make sound business decisions quickly and under pressure
- Ability to speak, read, and write in English
- Solid working knowledge of computer applications including Microsoft Office, POS systems, and timekeeping systems
- Ability to work well in a team-oriented, fast-paced event-driven environment
- Familiar with inventory cost control and menu planning
- Knowledge of sanitation requirements, food preparation guidelines, alcohol service policies, and safety standards
- Ability to calculate basic and complex math functions
- Ability to handle cash accurately and responsibly
- Adherence to highest standards of integrity, professionalism, ethics and confidentiality
- Ability to work independently with little direction
Job Duties
- Assists in the overall effective management of the catering and concessions operations
- Ensures total compliance with all alcohol service policies
- Monitors alcohol service throughout events to assure 100 percent compliance
- Reports any alcohol service or compliance issues immediately
- Assist in the management of catered and concession events from set-up to tear down
- Handle communication with hourly staff, culinary staff and guests
- Ensure legal, efficient, professional and profitable operation of the venue
- Review and analyze financial reports including budgets, projections, forecasting, revenue analysis, disbursements, capital investments, labor and product costs, wage and salary control, and P&L financial statements
- Conflict resolution, last-resort mediation, arbitration and labor negotiations
- Author, review and amend policies and procedures as requested by the General Manager
- Author and amend contracts, and authorize terms as directed by the General Manager
- Oversee scheduling and labor allocation
- Analyze ticket sales with General Manager to anticipate staffing needs and target market demographics
- Evaluate recent historical sales and purchasing data for purchasing patterns and cost of goods
- Program and maintain the point-of-sale system for accurate financial reporting
- Direct and assist managers in preparing and attaining future goals
- Provide managers with proper direction and follow up on assignments
- Inspect operations regularly to ensure quality standards
- Prepare and submit required reports on time
- Train and develop an effective team
- Review and assist in development of menus and marketing plans
- Establish and maintain professional relationships with show managers, suppliers, vendors and the public
