Job Requirements

  • ba or bs degree preferably in business or hospitality management
  • at least 3 years of management experience in the food and beverage industry
  • minimum 5 years’ experience in high-volume banquets, concessions, a la carte restaurant catering, or premium suite catering
  • professional experience with catering sales preferred
  • previous management experience in concessions operations within arenas, stadiums, or amphitheaters preferred
  • excellent verbal and written communication skills
  • ability to make quick decisions under pressure
  • fluent in English
  • proficient with Microsoft Office, POS and timekeeping systems
  • ability to work in a team and fast-paced environment
  • knowledge of inventory cost control and menu planning
  • understanding of sanitation, food prep, alcohol service, and safety regulations
  • strong math skills including percentages
  • trustworthy with cash handling
  • high integrity and professionalism
  • capable of independent work with minimal supervision

Job Qualifications

  • previous professional experience with catering sales strongly preferred
  • previous professional experience managing concessions operations in arenas, stadiums, or amphitheaters strongly preferred
  • ability to communicate clearly and professionally with staff and guests
  • ability to make sound business and operational decisions quickly under pressure
  • proficiency in English speaking, reading, and writing
  • solid working knowledge of Microsoft Office, point-of-sale systems, and timekeeping systems
  • ability to work well in team-oriented, fast-paced event-driven environment
  • familiarity with inventory cost control and menu planning
  • thorough knowledge of sanitation, food preparation, alcohol service, and safety standards
  • ability to perform basic and complex math functions
  • ability to handle cash accurately
  • adherence to high standards of integrity, professionalism, ethics and confidentiality
  • ability to work independently with little direction

Job Duties

  • assist in overall effective management of catering and concessions operations
  • ensure total compliance with all alcohol service policies
  • monitor alcohol service during events for 100 percent compliance
  • assist in management of catered and concession events from set-up to tear down
  • ensure legal, efficient, professional and profitable venue operations
  • review and analyze financial reports including budgets and forecasting
  • engage in conflict resolution and labor negotiations
  • author and amend policies and contracts as required
  • oversee scheduling and labor allocation
  • analyze ticket sales to anticipate staffing needs and target market demographics
  • evaluate historical sales and purchasing data to identify purchasing patterns
  • program and maintain point-of-sale system for accurate reporting
  • direct and assist managers in setting and achieving future goals
  • inspect operations regularly to maintain quality standards
  • prepare and submit required reports accurately and timely
  • train and develop an effective team
  • collaborate in menu and marketing plan development
  • establish and maintain professional relationships with show managers, suppliers, vendors and the public
