Job Duties
- Maintain complete knowledge of and comply with all departmental policies, service procedures, and standards
- provide exceptional service and ensure guest satisfaction with dining experiences
- manage a team of food and beverage professionals, ensuring brand standards and sequence of service components are executed precisely
- build, maintain, and adjust restaurant reservation blocks to maximize revenue
- maintain knowledge of menu items, ingredients, preparation methods, and presentation
- understand all liquor, beer, and non-alcoholic selections and use designated glassware and garnishes
- strictly abide by state liquor regulations
- inspect storage areas for proper supplies, organization, and cleanliness
- establish par levels for supplies and complete requisitions
- work with Chef de Cuisine and leadership to create exceptional culinary and guest experiences
- review sales and resolve discrepancies with accounting
- prepare weekly work schedules and adjust according to business demands
- interview, hire, and onboard new associates
- conduct performance appraisals and provide feedback
- handle disciplinary issues
- conduct daily pre-shift meetings
- attend division and hotel meetings
- monitor grooming and attire
- analyze and participate in weekly labor meetings
- ensure staff report to work as scheduled and document attendance
- coordinate proper breaks
- monitor staff performance and rectify deficiencies

- monitor preparation of station assignments
