Job Qualifications
- knowledge and ability to perform routine club management functions such as planning basic principles scheduling methods techniques and coordinating operations of dining services
- general knowledge of food prices dietetics grades of food and meal planning
- knowledge to skillfully apply new methods in managing food bar and beverage service
- knowledge of cooking and baking methods and preparing and serving quality food in large quantities
- ability to supervise and train personnel in food preparation service and managing storeroom laundry and bakery operations
- ability to inspect facilities for sanitation personal hygiene and equipment condition
- ability to prepare pertinent records and reports
Job Duties
- plan direct supervise and coordinate the Club's catering casual dining quick serve dining and Golf Course Restaurant operations
- execute all food production for a $4.5M operation
- train and supervise kitchen personnel
- implement inventory control and procurement of food supplies
- ensure compliance with cleanliness sanitation and hygiene standards
- prepare and maintain pertinent records and reports
- evaluate and recommend corrective actions regarding menus pricing and service methods
