Job Duties

  • You will be working as the Pastry chef of Maman Miami in the commissary kitchen located in the Wynwood area
  • You will work around 45 hours/week 5 days/week - NO night shift, only day shift usually from 8am to 4:30pm
  • You will be in charge of the Pastry department working in close contact with the Pastry Director and Culinary Director
  • Organization of the production of the menu and catering/events orders with the team
  • Hiring, training, documenting
  • growing and scheduling your team
  • Supplying different locations of freshly baked goods on a daily basis
  • Cost control, stock management, ordering and maintaining adequate par levels
  • Quality and quantity control in regards to the company standards
  • Leading a growing team forward
  • Report directly to your supervisors about any upcoming changes, positive and negative and effectively communicate with them regarding of your team
  • Organizing commissary deliveries for the stores in a timely manner
  • Able to perform all tasks required to the production of baked goods
  • (lifting, cutting, shaping, scaling, pipping…)
  • Be a solution oriented person
  • Share, teach, train your knowledge and passion for the craft
  • Take pride in any wins and place your best foot forward everyday
  • Have knowledge in french and american baked goods including fermentation, lamination, dough, quick bread, cakes and different types of creams and fillings
  • You take complete ownership of your team, kitchen and work
  • You ensure food and safety at all times
  • Keep in mind that maman is growing and developing everyday
