Job Requirements

  • Three years of experience as a cook in a high-volume restaurant environment
  • Ability to apply proficient braising, sautéing, broiling, and poaching techniques
  • Proficiency in using kitchen tools including slicer, mixer, robo coupe, tongs, and various knives
  • Basic knife skills
  • Knowledge of different pan and knife types
  • Understanding of sanitary practices
  • Possession of basic cooking tools
  • Working knowledge of weights, measures, and cooking techniques
  • Reading and math skills for recipes and measurements
  • Knowledge of MSDS program
  • Ability to stand for long periods
  • Tolerance to extreme hot and cold temperatures
  • Effective communication and organizational skills
  • Ability to comprehend written, oral or diagram instructions
  • Math skills including addition, subtraction, multiplication and division
  • Must apply for and maintain a Gaming License from the Tribal Gaming Agency
  • Must pass drug screening
  • Must pass auditions or skill testing
  • Flexible to work any shift
  • Willingness to work around secondhand tobacco smoke, mechanical parts, and airborne particles
  • Ability to handle physical demands including lifting up to 50 pounds regularly and 100 pounds occasionally

Job Qualifications

  • High school diploma or GED equivalent preferred
  • Formal culinary training preferred
  • Proven cooking experience in high-volume establishments
  • Skilled in multiple cooking methods
  • Capable of using diverse kitchen equipment
  • Knowledge of food safety and sanitation
  • Excellent teamwork and leadership abilities
  • Ability to maintain composure under pressure
  • Strong attention to detail in food preparation and presentation
  • Familiarity with health and safety regulations
  • Ability to train and guide junior kitchen staff

Job Duties

  • Support and uphold the Valley View Casino's Standards of Excellence
  • Maintain positive guest relations and resolve guest complaints
  • Greet guests courteously with personalized service
  • Provide guidance and direction to team members
  • Organize and delegate work assignments
  • Train lower-level cooks in equipment usage
  • Communicate regularly with kitchen leadership
  • Prepare food items according to standard recipes and menu
  • Apply various cooking techniques proficiently
  • Work with delicate kitchen equipment requiring fine dexterity
  • Prepare base sauces, stocks, and soups
  • Participate in cooking, preparing, and assembling food
  • Work the line in different kitchen locations
  • Operate kitchen equipment like slicers, steamers, fryers, ovens, broilers, grills, mixers, kettles, and flat tops
  • Maintain knowledge of all food products
  • Prepare order lists for recipe preparations
  • Perform side work including restocking workstations
  • Adhere to food cost and quality control procedures
  • Rotate products using first-in, first-out method
  • Properly label and date all products
  • Check station setup and cleanliness before, during, and after shifts
  • Abide by health codes and handwashing guidelines
  • Observe all safety procedures
  • Strive for high-quality plate presentation
  • Perform other duties as assigned by management
  • Maintain professional and ethical conduct
  • Keep consistent attendance record
