  • High School Diploma
  • Basic mathematical skills including ability to calculate averages
  • Previous food manufacturing experience preferred
  • Sanitation experience a plus

Job Duties

  • Removes all loose cheese from the equipment using compressed air
  • Place non-edible cheeses into boxes labeled 'Not for Human Consumption'
  • Bags electrical boxes and plugs to prepare equipment for sanitation
  • Clean and sanitize all equipment to meet regulatory standards
  • Tear down and set up all equipment for sanitation including packaging equipment
  • Set up and operate all packaging and related equipment
  • Responsible for quality efficiencies, downtime and other tasks as required
  • Efficiently start up and change over Koch line and check for leaking bags according to HACCP
  • Continuously check the product for proper texture, general appearance, and product contamination
  • Monitor the size and shape of the cut ensuring it meets requirements of desired size and type
  • Monitor the amount of anti-caking agent added to the product consistent with standard operating procedures
  • Monitor handling of the cellulose powder ensuring it is protected from foreign materials
  • Maintain proper weight ranges of product when packaging, stays within MAV
  • Spot check packages for errors in printing, color, registration, typesetting, sharpness, clarity and print location
  • Continuously monitor the oxygen content left in finished product packages hourly and at start-up
  • Accurately perform and record daily logs including metal detector, schedule control, operational, package film, package loss, weight control, and O2 logs
