Job Requirements

  • High school diploma or general education degree (GED)
  • four years of related experience and/or training
  • valid Food Handler's certificate
  • ability to stand and walk frequently
  • ability to lift up to 25 pounds
  • ability to work flexible hours including nights and weekends
  • strong communication skills
  • ability to work well in a team environment

Job Qualifications

  • High school diploma or general education degree (GED)
  • four years of related experience and/or training
  • advanced knowledge in knife skills including butchery and protein preparation
  • knowledge of soups, sauces, and prep sheet production
  • ability to read and comprehend simple instructions and write correspondence
  • ability to effectively present information in small group settings
  • ability to apply mathematical concepts such as fractions, percentages, and ratios
  • problem solving skills and ability to interpret written, oral, diagram, or schedule instructions
  • understanding of legal concepts and laws relevant to food and beverage industry
  • valid Food Handler's certificate

Job Duties

  • Assist the Executive Chef by serving as a leader on the assigned line, meal period, or banquet event
  • execute banquet events and meal periods in the absence of the Executive Chef maintaining all standards
  • work closely with line cooks and serve in a training capacity
  • assist in daily purchasing and inventories
  • create daily specials aligning with presentation and cost standards
  • follow and help plan recipes, procedures, and plate-ups in a timely fashion
  • master all kitchen stations including soups, sauces, protein butcheries, presentations, meal production times, and prep sheet administration
  • coordinate food production with meal and serving hours to preserve quality, temperature, and appearance
  • portion food on plates, add gravies, sauces, and garnish servings
  • maintain assigned workstation in safe and sanitary condition including washing pots and pans
  • keep refrigerators and dry shelves clean and organized
  • maintain a sterile kitchen and understand proper chemical usage
  • break down and reset kitchen equipment
  • attend in-service training and educational seminars as assigned
