Job Requirements

  • Must be 18 years of age or older
  • two (2) years line cook experience in a similar environment
  • ability to read, understand, and prepare recipes
  • food handler card required
  • continuously stands
  • frequently walks and reaches above/below shoulder level
  • occasionally bends/stoops, climbs, kneels, and squats
  • frequently lifts/carries up to ten (10) pounds
  • occasionally lifts/carries up to seventy five (75) pounds
  • occasionally pushes/pulls up to seventy five (75) pounds
  • ability to handle heavy pots and pans, operate kitchen equipment, and use cutlery
  • must be able to meet suitability requirements of the Redding Rancheria’s Gaming Agency to obtain a gaming license
  • must comply with the Win-River Resort & Casino Common Language Rule
  • ability to work in environments with second-hand tobacco smoke and varying inside/outside conditions

Job Qualifications

  • Two (2) years line cook experience in a similar environment with working knowledge of kitchen equipment and its proper use, as well as excellent knife skills
  • ability to read, understand, and prepare recipes
  • food handler card
  • high school diploma or equivalent preferred
  • knowledge of food safety standards
  • familiarity with point-of-sale systems
  • strong organizational and multitasking skills
  • ability to work in a fast-paced environment
  • excellent communication skills
  • ability to follow directions and food preparation guidelines

Job Duties

  • Cuts and prepares vegetables, fruits, meats, soups, sauces, and desserts by following recipes and picture presentations of menu items
  • works sauté, broiler, fryer, pizza ovens, and pantry stations
  • expedites the line by accurately reading and calling tickets
  • controls portion sizes of meats, salads, entrees, seafood, and appetizers, as well as preparing food daily to meet pars
  • organizes cooks line, which includes shelves, freezers, and reach-in refrigerators
  • alerts Food and Beverage Manager to potential food hazards, food spoilage, and preventable waste
  • ensures that foods are held, reheated, and frozen at correct temperatures
  • marks, dates, covers, and rotates all perishable and non-perishable foods using First-In, First-Out (FIFO) method
  • cleans and sanitizes workstations according to cleaning schedules
  • adheres to opening and closing policies and procedures
  • prepares menu items following quality and presentation standards set forth by the Food and Beverage Manager
  • prepares food and non-alcoholic beverage orders according to recipes and specifications
  • cooks meat, seafood, and poultry to desired temperatures
  • re-stocks menu items throughout shift according to assigned pars
  • assists in the preparation of food items for other food and beverage outlets
  • transfers supplies from storage to work areas
  • keeps storage areas clean at all times
  • maintains workstation with cleanliness and sanitation being a priority
  • operates point-of-sale system and makes correct change for the guests
  • knows menu items and prices
  • abides by all applicable liquor regulations and Resort & Casino policies and procedures pertaining to alcoholic beverages
  • maintains cash bank provided by Cage in accordance with policies and procedures
  • performs all duties in a manner that continually supports the vision, mission, values, and principles of the Resort & Casino
  • performs all duties in a manner that adheres to the guest service standards established by Win-River Resort & Casino’s guest service program
  • other duties as assigned by the Food and Beverage Manager
