Job Requirements
- Must be 18 years of age or older
- A high school diploma, or the equivalent thereof, is preferred
- Two years line cook experience in a similar environment
- Ability to read and prepare recipes
- Food Handler card
- Ability to stand continuously
- Frequently walks and reaches above/below shoulder level
- Occasionally bends/stoops, climbs, kneels, and squats
- Frequently lifts/carries up to ten pounds
- Occasionally lifts/carries up to seventy five pounds
- Occasionally pushes/pulls up to seventy five pounds
- Ability to handle heavy pots and pans, to operate kitchen equipment, and to use cutlery
- Ability to meet the suitability requirements of the Redding Rancheria’s Gaming Agency
- Ability to comply with the Win-River Resort & Casino Common Language Rule
Job Qualifications
- Two years line cook experience in a similar environment with working knowledge of kitchen equipment and its proper use, as well as excellent knife skills
- Ability to read, understand, and prepare recipes
- Food Handler card
Job Duties
- Cuts and prepares vegetables, fruits, meats, soups, sauces, and desserts by following recipes and picture presentations of menu items
- Works sauté, broiler, fryer, pizza ovens, and pantry stations
- Expedites the line by accurately reading and calling tickets
- Controls portion sizes of meats, salads, entrees, seafood, and appetizers, as well as preparing food daily to meet pars
- Organizes cooks line, which includes shelves, freezers, and reach-in refrigerators
- Alerts Food and Beverage Manager to potential food hazards, food spoilage, and preventable waste
- Ensures that foods are held, reheated, and frozen at correct temperatures
