Job Requirements

  • Must be 18 years of age or older
  • A high school diploma, or the equivalent thereof, is preferred
  • Two years line cook experience in a similar environment
  • Ability to read and prepare recipes
  • Food Handler card
  • Ability to stand continuously
  • Frequently walks and reaches above/below shoulder level
  • Occasionally bends/stoops, climbs, kneels, and squats
  • Frequently lifts/carries up to ten pounds
  • Occasionally lifts/carries up to seventy five pounds
  • Occasionally pushes/pulls up to seventy five pounds
  • Ability to handle heavy pots and pans, to operate kitchen equipment, and to use cutlery
  • Ability to meet the suitability requirements of the Redding Rancheria’s Gaming Agency
  • Ability to comply with the Win-River Resort & Casino Common Language Rule

Job Qualifications

  • Two years line cook experience in a similar environment with working knowledge of kitchen equipment and its proper use, as well as excellent knife skills
  • Ability to read, understand, and prepare recipes
  • Food Handler card

Job Duties

  • Cuts and prepares vegetables, fruits, meats, soups, sauces, and desserts by following recipes and picture presentations of menu items
  • Works sauté, broiler, fryer, pizza ovens, and pantry stations
  • Expedites the line by accurately reading and calling tickets
  • Controls portion sizes of meats, salads, entrees, seafood, and appetizers, as well as preparing food daily to meet pars
  • Organizes cooks line, which includes shelves, freezers, and reach-in refrigerators
  • Alerts Food and Beverage Manager to potential food hazards, food spoilage, and preventable waste
  • Ensures that foods are held, reheated, and frozen at correct temperatures
