Job Requirements
- Minimum of two years experience in an upscale culinary operation desired
- Formal culinary training from an accredited institution is preferred but not required
- Ability to stand for long periods in a hot environment
- Physical dexterity to bend, lift, push and pull
- Must be a true team player with quick action, decisiveness and sound rationale
- Must be cooperative and dedicated in teaching and mentoring situations
- Presentable and appropriate appearance
- Customer focus
- Must adhere to health and safety regulations
Job Qualifications
- Background in a multi facet operation including ala carte and catering/banquets food production
- High emphasis on quality, consistency and customer satisfaction
- Ability to work well in an open kitchen concept with proper conduct
- Ability to mentor and lead others by example
- Strong work ethic and passion for quality
- Experience with food preparation equipment
- Knowledge of state and local health and safety regulations
Job Duties
- Be a mentor to all who come to Goodwill for training or job placement assistance
- Demonstrate core values of Goodwill Industries by modeling service, ownership, accountability and respect
- Prepare food in accordance with club recipes and standards
- Prepare all required items
- Set up service units with needed items
- Prepare items that are ordered in accordance with established portions and presentation standards
- Notify sous chef of expected shortages
- Ensure that assigned work areas and equipment are clean and sanitary
- Assist the sous chef in maintaining security and safety in the kitchens
- Maintain neat professional appearance and observe personal cleanliness rules at all times
- Set-up, maintain and break down line station(s)
- Requisition items needed to produce menu items
- Adhere to state and local health and safety regulations
- Cover, date and neatly store all leftover products that are re-usable
- Maintain the highest sanitary standards
- Coordinate and time orders with other kitchen operations
- Prepare meats, seafood, vegetables and other items required for line and special function purposes
- Carefully follow standard recipes when pre-preparing and preparing all items
- Use food preparation equipment according to manufacturers instructions
- Clean work station
- Set-up the broiler
- Broil and grill all meats on the menu when appropriate meals are ordered
- Prepare sauces and accompanying garnishes for all broiled and grilled menu items
- Requisition supplies needed to broil meats
- Assist with preparation of other food products on serving line as needed
- Consistently use safe and sanitary food handling practices including those related to personal hygiene
- Return soiled food preparation utensils and other small wares to the proper areas
- Make recommendations for maintenance, repair and upkeep of the fry area and equipment
- Attend staff meetings
- Assist with other duties as assigned by sous chef
