Job Requirements

  • Must have culinary degree or equivalent cooking certification
  • Minimum 3 years experience in institutional catering environment
  • Ability to prepare and complete complex recipes accurately
  • Knowledge of HACCP regulations and compliance
  • Proficiency in safe food handling and sanitation
  • Ability to oversee portion control and productivity
  • Must be flexible and able to adjust to changing priorities
  • Good communication skills with customers and coworkers
  • Ability to read, write, and speak basic English
  • Commitment to full compliance with work rules and regulations

Job Qualifications

  • Culinary degree or cooking certification preferred
  • At least 3 years of experience in high volume institutional catering preferred
  • Demonstrated experience in sauce and stock preparation, garnishing, and menu breakout
  • Ability to prepare entrées for multiple airlines
  • Knowledge of HACCP compliance
  • Skilled in safe food handling and kitchen sanitation
  • Strong organizational and communication skills
  • Ability to read, write, and speak basic English

Job Duties

  • Prepare large batch meals according to customer specifications
  • Follow HACCP regulations in all food preparation processes
  • Review production sheets to confirm meal specifications
  • Prepare sauces, stocks, garnishes, and menu components
  • Oversee portion sizes and ensure consistency
  • Control kitchen expenses and improve productivity
  • Maintain proper sanitation and safe food handling practices
