Job Requirements
- Must be at least 16 years old (18 for some food prep duties)
- Ability to work AM/PM shifts and flexible hours as specified by management
- Must maintain a score of 90% or better on Health Department inspections
- Must achieve 90% or better on mystery shopper reports
- Adhere strictly to kitchen dress code (chef shirt, black pants, apron, hat or hair net, black non-skid shoes, no piercings, beard guards if necessary, no cell phone use except on breaks)
- Must obtain and keep current Nueces County Food Handler's Permit
- Ability to stand and walk for 6 to 10 hours on concrete surfaces
- Ability to lift and carry 40 to 75 pounds without assistance and up to 150 pounds with assistance
- Ability to push/pull/move items weighing between 35 and 150 pounds
- Must have corrected vision and hearing
- Must be able to communicate calmly and effectively
- No use of cell phone on floor
- All routine work completed and documented per company policies
- Confidentiality of client and company information maintained at all times
- Follow company rules and safety protocols
- Be mentally alert and able to multitask
- Wear hair above collar length
- Comply with all health, safety and operational standards
- Must be able to perform all physical and mental essential functions of the job.
Job Qualifications
- High school diploma or equivalent preferred
- Experience in kitchen food preparation or culinary arts
- Ability to follow detailed recipes and operational procedures
- Strong communication skills in English
- Teamwork and interpersonal skills
- Basic math skills for inventory and cash handling
- Ability to pass training assessments with high accuracy
- Knowledge of food safety and hygiene standards
- Capability to operate kitchen equipment safely
- Physical stamina to stand and work long hours
- Familiarity with health department regulations
- Previous experience in a fast-paced kitchen environment an advantage.
Job Duties
- Bring food issues to Kitchen Manager attention to bring to weekly meetings
- Meet or exceed 'Water Street Way' standards for cleanliness, product quality and guest satisfaction
- Provide quality prep by adhering to all recipe standards
- Assist in the training of all kitchen positions following the Kitchen training manual
- Implement all systems and forms for kitchen stations
- Follow all pars designed for kitchen stations
- Stand on hard surfaces for shifts up to 10 hours
- Work in excessive heat in kitchen
- Work with excessive smoke (mesquite wood)
- Obtain and maintain a Nueces County Food Handler's Permit at all times
- Manage inventory and record waste during shifts
- Operate ovens, stoves, deep fryers, and grills and clean this equipment
- Maintain cleanliness of work areas including floors
- Stock food items, dishes, and silverware in appropriate locations
- Communicate effectively with team and management
- Adhere to all dress code requirements and company policies
- Assist in food preparation duties including slicing, cutting, garnishing and cooking
- Handle food waste accountability
- Pass training tests regarding bar service and menu items with 90% accuracy
- Maintain safety and hygiene standards in kitchen
- Perform additional kitchen maintenance tasks such as cleaning filters and monitoring trash cans
- Follow Health Department regulations on cooking meat and fish items.
